Catering Manager

Mission

Implement, optimize & continuously improve the Brussels Airlines’ in-flight products and services on a selection of routes, within the defined strategic guidelines and agreed budget in order to create value and ensure customer satisfaction.

Tasks

Key result area 1 : Budget

* Provide input for the budget of the assigned routes as part of the total Inflight product budget.

* Follow-up, control and approval of invoices in collaboration with accounting/controlling.

* Generate ancillary revenues by sourcing and mediating/liaising with other departments (product development, ancillary revenue and marketing) in order to optimize marketing potential of external brands (lower unit price, sampling, joint marketing actions)

* Cost reduction: continuous striving for cost optimization / savings

Key result area 2 : Product Definition & Development

* Propose developments to improve the inflight product of the assigned routes based on: new ideas, market intelligence, customer surveys, competition behavior analyses and crew feed-back. All in strong collaboration with all involved/operational departments.

* Propose and organize the selection of products for the different product cycles on the assigned routes in order to ensure variation and to maintain appeal of the product. Prepare and organize meal presentations

* Define/adapt product offer for special operations: charters, wet lease and irregularities

Key result area 3 : Implementation Co-ordination Communication

* Implementation of (new) inflight products/concepts by ensuring a clear, structured and standardized communication towards all concerned parties: Product development, Inflight crew department, catering providers (Brussels + Outstations), cleaning suppliers (Brussels + Outstations), logistic partners and external suppliers (loading plans / meal plans / garnishing orders, meal definitions,…).

* Coordinate and support all internal and external parties in all steps of the development process.

* Adapt commissary manuals to new product features, improvements and changes in order to ensure smooth implementation

Key result area 4 : Daily Operations

* Ensure the distribution of clear instructions to all service providers to guarantee smooth operations

* Support cabin crew and catering units in day-to–day operations

* Irregularity operations: prepare standardized action plans to cope with irregularities. Ensure that operational departments in Brussels and in the outstations receive adequate information for optimized operations and to minimize the irregularity impact. On the spot, support FOPS & GOPS with major irregularities (AOG, 24 hrs delay…), in coordination with external providers.

* Prepare, instruct and support the outstations during start-up of new operations. Ensure a follow-up and take corrective actions whenever necessary.

Key result area 5 : VARIA depending on the allocated routes

* Co-ordinate with the Inflight Officers in order to ensure that outstations who provide catering through local caterers (eg. North America) dispose of required equipment & specific products (equipment & food shipments) to avoid zero stock break levels.

* Manage the menu cards production (calculation of needs, elaboration of text files, making corrections, ordering, recuperation and ensure stock management)

* Source, select, negotiate and develop partnerships with the Star Chef for development of Business class LH menus.

* Manage buy-on-Board product on LHL in collaboration with SHL manager when applicable

* Special events: define the products and co-ordinate the implementation of adapted products for specific events like Tomorrowland, Red devil flights, (VIP) charters, (customer) events, opening of new stations, national holidays, marketing actions…

* Co-ordinate the direct sourcing/contracting of products with Procurement

Profile

* Bachelor

* Experience in operations

* Good co-ordination skills, ability to work transversally with internal and external partners

* Experience and/or interest in catering (Food & beverage, overall inflight experience)

* Anticipation & proactive thinking and acting

* Ability to take fast decisions in difficult situations

* Negotiation skills

* Retail and logistics experience highly appreciated

* Stress resistance

* Flexibility

* Language: English + preferably Dutch, French or German

* Driving license

* Good knowledge of Microsoft Office (Excel, Word, Powerpoint)
